Basic Vegan:Home made rice milk

One of the most useful vegan preparation is the vegetal milk: in my case the milk one. You can drink it as it is or use it in other preparations (such as béchamel or in cakes).

Ingredients:
1L of water
50 g of rice (70 g if you want a thicker version)
a pinch of salt

Optional: if you use it in sweet recipe or you drink it for breakfast you can add 3 spoons of sugar, a vanilla bean or a stick of cinnamon.

Put the rice in water, add the salt and let it boil for around 30 minutes (until the rice smash easily). Let it cool and whip it with a mixer until it is smooth. Filter it using a strainer to remove the small particle left.

Una delle preparazioni più versatile della cucina vegan è quella del latte vegetale: nel mio caso quello di riso. Si può bere così com'è oppure utilizzarlo in altre preparazioni (come la besciamella o in dolci).

Ingredienti:
1L di acqua
50g di riso (o 70 se vuoi una versione più densa)
un pizzico di sale

Facoltativo: se vuoi usare il riso in  una ricetta dolce o berlo per colazione puoi aggiungere 3 cucchiai di zucchero, un baccello di vaniglia o una stecca di cannella.

Mettere il riso nell'acqua, aggiungere il sale e far bollire per 30 mi nuti. Lasciar raffreddare e frullare con un mixer finchè il liquido sarà bello liscio. Filtrare in un colino per rimuovere le particelle rimaste.

Vegan Basic: Crepes


One of the basic recipe of international cooking is the one of crepes... 
 Converting a traditional recipe, based essentially on milk, butter and eggs, in a dignitous vegan version has not been hard as I thought.... The result is not exactly as the original one (to be honest the salted version, to me, was even better than the original one) but I consider my experiment successfull:

Ingredients:
  • 150g of flour
  • 1 full spoon of potato flour( 2 if you are  making sweet crepes)
  • 1 spoon of chickpea flour (if you are making salted crepes)
  • 100g of water
  • 100g of rice milk
  • 1 spoon of olive oil
  • a pinch of salt
for cooking: olive oil
Optional: Preparing the salted crepes you can add in the dough black pepper, aromatic herbs or nutmeg. In the sweet dough you can add some sugar or cinnamon in powder if you like it.

Method: Mix the ingredients in a large bowl using a whip until the dough is very smooth. Let it stand for half an hour. Warm up a pan and add some olive oil. Cook the crepes from each side for a minute.

Una delle ricette base della cucina internazionale è quella delle crepes...
Convertire un piatto basato essenzialmente su latte burro e uova in una versione vegan dignitosa non è stato difficile come temevo... Il risultato non è esattamente come l'originale (a dire il vero la versione salata mi pare anche migliore) tuttavia considero l'esperimento ben riuscivo:

Ingredienti:
  • 150 g di farina 00
  • 1 cucchiaio colmo di fecola di patate (2 nel caso di crepes dolci)

  • 1 cucchiaio colmo di farina di ceci ( per crepes salate)
  • 100 g di acqua
  • 100g di latte di riso
  • 1 cucchiaio abbondante di olio e.v.o.
  • un pizzico di sale
 Per la cottura: olio e.v.o.

Facoltativo: le crepes salate si possono arricchire con pepe nero, noce moscata, erbe aromatiche, mentre quelle dolci si possono dolcificare con 1 o 2 cucchiai di zucchero e se volete aromatizzare con della cannella in polvere.

Procedimento:
Mettere tutti gli ingredienti in una terrina e mescolare bene con l'aiuto di una frusta fino ad ottenere un composto liscio. Lasciare riposare per circa una mezz'oretta.
Scaldare bene una padella antiaderente e cuocere le crepes per circa un minuto per lato.

Horchata



Ingredients:
1 cup of rice
5 cups of water
1 cinnamon stick
1 vanilla bean
half cup of sugar

Put in a bowl the rice, water and cinnamon and let it stand for at least 3 hours. Let it boil for 30 minutes. Switch off   the fire and add the sugar and the seeds of vanilla. Let it cool dowm. Remove the cinnamon stick, whip the mix and filter it.

According to the tradition, horchata has to be served with ice and a sprinkle of cinnamon powder. Or if you prefer, make it hot for the cold winter nights :)


 Ingredienti:
1 tazza di riso (possibilmente a chicco lungo)
5 tazze di acqua
1 stecca di cannella
1 baccello di vaniglia
mezza tazza di zucchero

Mettere in una bacinella il riso con l'acqua e la cannella e lasciar riposare per almeno tre ore. Mettere a bollire per circa 30 minuti. Spegnere e aggiungere lo zucchero e i semini contenuti nel baccello di vaniglia. Lasciar raffreddare. Rimuovere la stecca di cannella, frullare bene il composto e filtrarlo in una bottiglia.

Per onorare la tradizione servirlo con ghiaccio e una spolveratina di vaniglia. Altrimenti nelle fredde sere invernali potete  servirlo caldo in una bella tazza :)

Vegan Wrap


Today I experienced a super tasty lunch :) I prepared some chapati (the recipe of chapati is here) and I fill it with some fresh italian radicchio, cucumber, carrots in slices, some pan-fried seitan and ketchup sauce. So delicioussss!!!

Oggi ho avuto un pranzetto davvero delizioso :) Ho preparato del chapati (la ricetta si trova qui) e l'ho riempito con un po' di radicchio fresco, cetriolo, carote a fettine, seitan saltato in padella e del ketchup. Così deliziosooo!!!





The best thing about this wrap is that you can fill it with whatever you want according also to the seasonal vegetables. Instead of seitan you can use grilled tofu, or a bit of dough of  Veggieballs fried in pan for few minutes with oil, if you smashed them a bit it will look like the vegan version of kebab:). If you like yogurt as well u can add a spoon of it as well, better if mixed with some fresh or dried herbs ( basil, oregano, chives, persil, etc. ). Buon appetito!!!

Il miglior aspetto di questi wrap è che puoi riempirli con quello che vuoi, usando possibilmente verdura di stagione. Invece del seitan puoi usare tofu grigliato o un po' di impasto delle polpette di lenticchie saltate con un po' d'olio il padella per alcuni minuti, se le spappoli un po' diventerà la versione vegana del kebab :) Se ti piace lo yogurt ne puoi aggiungere un cucchiaio, meglio se con delle erbette fresche o anche secche (basilico, origano, erba cipollina, prezzemolo, etc.). Chapati /Roti

My amazing-pakistani-boyfriend tought me how to prepare chapati, a flat bread typical of India and Pakistan. It is very easy to do and it can be used as base in many recipes. 
Here the instructions he wrote for me:

"How to Make Chapati/ Roti
Ingredients:
whole wheat flour
salt
Warm water
A bit of oil
Method :
Take an open Bowl and put flour inside. Add some salt and a bit of oil. Slowly add warm water and with hands mix it properly. Take care it doesn't become too hard or too soft. The key of good mixture is to mix it properly with force. When u r finished with the mixture, leave it for 15 to 20 mins to settle down.
Meanwhile, put Griddle on fire and make it hot. Take small balls of ur flour mixture and make it flat using roller. Put it on hot griddle and cook it from both sides. "

Il mio fantastico-ragazzo-pakistano mi ha insegnato come preparare il chapati, un specialità dell'India e del Pakistan che assomiglia alla nostra piadina. Il chapati è facile da fare e si può usare come base in molte ricette. Ecco le istruzioni che mi ha scritto:

"Come preparare Chapati/Rotti
Ingredienti:
farina integrale
sale
acqua tiepida
un po' d'olio
Procedimento:
Prendere una ciotola e versare la farina al suo interno. Aggiungere un pizzico di sale e un po' d'olio.  Aggiungere lentamente acqua tiepida e lavorare l'impasto con le mani. Fare attenzione che non sia nè troppo duro nè troppo molle. La chiave per un buon impasto è quello di mischiare con forza. Una volta finito lasciar riposare per 15/20 minuti. Nel frattempo mettere una padella antiaderente sul fuoco a riscaldare. Prelevare una piccola pallina di impasto e spianarla con un mattarello. Cuocerla sulla padella da entrambi i lati."




My personal suggestion: if you want to make it more tasty you can add on the pan a bit of oil :)
It will be even more delicious.

Il mio suggerimento: se vuoi renderlo più gustoso, puoi aggiungere un po' d'olio sulla padella :)
Sarà ancora più delizioso.

My Xmas Cake




My tradition for Christmas lunch is to prepare the cake to share it with all my family. Every year I prepare a new recipe never experienced before :) This year I've done the black forest cake. I will post the recipe very soon (I need time to translate it from the german version I have).

La mia tradizione per il pranzo di Natale è quella di preparare il dolce da condividere con tutta la mia famiglia. Ogni anno preparo una ricetta mai provata prima :) Quest'anno ho fatto la torta black forest.
Posterò presto la ricetta (ho bisogno di tempo per tradurre la versione tedesca che ho).

Polpette di lenticchie vegan / Lentils Veggieballs



Today as soon as I have seen lentils in my pantry, I wanted to prepare something special with them.
So why not some veggieballs? I checked on internet for a vegan recipe and then I customized it... Let's see the ingredients:
  • 400 g of dried lentils
  • 2 boiled potatoes
  • 1 onion
  • 1 stalk of celery
  • my Special Salt
  • 1 carrot
  • olive oil
  • some walnuts
  • oregano 
  • bread crumbs
I boiled the lentils until they were very soft. I choped onion, celery and the carrot in very small pieces and I fried them for few minutes. I removed the liquid from the lentils and I smashed half of them with the the potatoes. In a bowl I mixed the soffritto* with the smashed vegetables, the other lentils, oregano and salt. Once properly mixed ( if the mixture is too soft add some bread crums) I created some balls and I rolled them in bread crumbs.
To cook them two options are possible:
  1. the most tasty one is to fry them until golden brown
  2. the most healthy one is to cook them in oven for 30 min at 200°C

Oggi appeno ho visto le lenticchie in dispensa ho deciso di usare per preparare qualcosa di gustoso . Perchè non delle polpette vegetali? Ho cercato su internet una ricetta vegana e poi l'ho personalizzata... Vediamo gli ingredienti:
  • 400g di lenticchie secche
  • 2 patate bollite
  • una cipolla
  • un gambo di sedano
  • una carota
  • il mio sale speciale
  • olio extra vergine di oliva
  • alcune noci
  • origano
  • pangrattato
Ho bollito le lenticchie fino a rendere molto morbide. Ho tritato la cipolla, il sedano e la carota e li ho soffritti per alcuni minuti. Ho scolato le lenticchie e ho frullato la metà di loro con le patate. In un recipiente ho mescolato il soffritto con le verdure frullate, le lenticchie intere, origano e sale. Una volta ben mischiati (se il composto fosse troppo morbido aggiungere un po' di pangrattato), ho formato delle palline e le ho passate nel pangrattato. 
Per la cottura ci sono due possibilità:
  1. la più golosa è quella di friggerle in olio di semi fino a doratura
  2. la versione più salutare è quella di cuocerle in forno a 200°C per circa 30 minuti

*Note for my English readers: Soffritto is an Italian word to express a mixture of finely chopped onions, celery, carrots ( etc.) sauteed in olive oil.

Into Vegetarian

Since 6th december 2012 I decided to have a vegetarian lifestyle (actually I hope to switch into vegan sooner or later) ...I was thinking about this change since a lot of time but I needed motivation to do it... Finally I have it!

Dal 6 dicembre 2012 ho deciso di seguire uno stile di vita vegetariano(veramente prima o poi vorrei abbracciare la causa vegana)... Stavo pensando di attuare questo cambiamento da un po' di tempo, ma avevo bisogno di motivazione.... E finalmente ce l'ho!

The hardest thing is not the diet itself (I've never been a big fan of meat, I used to eat it not very often) but to deal with other people. Let's see some example: I live in a non vegeterian house, with often don't understand my choice.
In my social life, I am a member of Couchsurfing, it can be hard first times but I'm sure things will go better with the passage of time
 .
La parte più dura non è la dieta in sé stessa ( non sono mai stata una gran fan della carne, non la mangiavo molto spesso) ma il rapporto con le altre persone. Alcuni esempi: Io vivo in una casa con persone non vegetariane, che spesso non capiscono la mia scelta.
Nella mia vita sociale, sono un membro di Couchsurfing, può essere un po' dura le prime volte  ma sono sicura che le cose saranno più semplici con il passare del tempo.

{In tempo di crisi} Il porta lavanda / Lavander sackets






















































Since I bought a plant of lavander, I was thinking what to do with mervellous smelly seeds. As soon as I found some wool cloth,  a piece of voile and some old bottons, I have done some little and cute sackets.


 
Da quando ho comprato una piantina di lavanda da mettere in giardino, stavo cercando un modo carino per utilizzare i semi profumati di questa pianta. Con dei ritagli di pannolenci  e di velo e alcuni vecchi bottoni trovati in casa, ho realizzato questi graziosi sacchettini profumati.

  1. Cut two rounded pieces of wool cloth of the size you wish, one with a hole with a heart shape
  2. Place the veil on the hole and sew it with visible stiches
  3. Fill the veil with lavander seeds, close the veil and sew it with the part below with invisible stiches
  4. Place the other piece of wool cloth on this one to hide properly the filling, and sew the two parts of wool cloth with visible stiches.

  1. Taglia due cerchi di pannolenci della dimensione desiderata, di cui uno con un buco dalla forma a cuore
  2.  Posiziona il velo sopra il buco e fissalo con dei punti a vista
  3. Riempi il velo con i semi di lavanda, richiudilo e cucilo alla parte inferiore con dei punti invisibili
  4.  Posiziona l'altro cerchio di pannolenci su questo, per nascondere il "ripieno" e cuci tra di loro i sue cerchi con dei punti visibili

Dulce de leche



The recipe of today is a traditional sweet product of South America called Dulche de leche (literally "candy of milk"). Why I decided to prepare this unusual dish?First I have good memories of a jar of dulche de leche bought when I was in Barcelona a couple of years ago... One of the best brekfast ever had! Moreover Andrew, a friend of mine, brought me some days ago some delicious cookies with dulche the leche filling... Simply amazing! (Actually I don't know if the recipe itself is really amazing or the fantabulous cooking skills of Andrew created a masterpiece out of nowhere...I will talk soon, in one of the next posts, of the great (and never dull) recipes I gave me and you will love him as well).
At last but not least, as far as I'm a fledgling chemist, I was interested in the transformation that occurs in preparation which is caused by a combination of two common browning reactions called caramelization and the Maillard reaction.
The ingredients required are just four:
  1. a liter of milk
  2. 300 g of sugar
  3. a vanilla pod
  4. a teaspoon of  sodium bicarbonate
Put the all ingredients in a pot with a thick bottom, cook over low heat untill the volume of the solution is one sixth of the initial one and the colour is similar to caramel.
The result is awesome! It's delicious if you spread it on bread, and even better to fill cakes or on the top of icecream... Buon appetito!

La ricetta di oggi è un piatto trazionale del Sud America che si chiama Dulche de leche (alla lettera "dolce di latte"). Perché ho deciso di preparare questo piatto insolito? Innanzitutto ho degli splendidi ricordi circa un barattolino di dulche de leche comprato quando ero a Barcellona un paio di anni fa... Una delle migliori colazioni mai fatte! Inoltre Andrew, un mio amico, alcuni giorni fa mi ha portato dei deliziosi dolcetti ripieni di dulche de leche.... Semplicemente fantastici! (In realtà non so se la ricetta fosse di per sé strepitosa oppure se le incredibili capacità culinarie di Andrew abbiano creato un capolavoro dal nulla....Parlerò presto, in uno dei prossimi post, delle ricette super azzeccate (e mai banali) che mi ha dato e anche voi lo adorerete).
Infine, dal momento che sono una chimica in erba,  ero molo interessata alla reazione di caramelizzazione o meglio della Reazione di Maillard che interviene in questa preparazione.


Gli ingredienti necessari sono solo quattro:
  1. un litro di latte fresco intero
  2. 300 g di zucchero
  3. una bacca di vaniglia
  4. un cucchiaino di bicarbonato di sodio
Versare tutti gli ingredienti in un pentolino capiente a fondo spesso, cuocere a fuoco basso fino a che il volume sarà diventato circa un sesto di quello iniziale e il colore sarà di un bel tono caramello.
Il risultato è fantastico! Il dulce de leche è delizioso spalmato sul pane, o ancora meglio come farcia di una torta o sul gelato... Buon appetito!

{Less is more}



From today there will be a big piece of news, my blog will also have an English version for my non-Italian readers. As soon as possible I will try to translate also the posts already published so everyone can read the all blog.
I'm a follower of several fashion blogs and, although many bloggers keep on talking about "Less is more", I never saw anyone applying this philosophy of life on daily basis. 

Just have  few clothes, nicely choosen and use them as much as possible.
Which is the secret for this magic chemistry? 
  • Find a good balance between basic clothes (click here for a detailed description of what basic clothes are) and more particular on.
  • Buy less new clothes and use more the one  we already have and that are great on us.
  • Don't be afraid do customize our clothes to make them unique. 
  • Just dare mixing clothes and creating new solutions.

 



Da oggi il mio blog ha una novità ovvero sarà in versione bilingue Italiano-Inglese per i miei lettori stranieri :) Con il tempo cercherò di tradurre in inglese anche i post precedentemente scritti per rendere il mio blog accessibile a tutti.

  • Comprare meno abiti e sfruttare di più quelli che già possediamo e che ci donano.
  • Non aver paura di personalizzare i nostri vestiti per renderli unici.
  • Semplicemente osare nel mixare i vestire e nel creare nuove soluzioni.
